Great wine vinegar begins with a good mother barrel and premium Zinfandel grapes picked at optimum sugar. At Marcucci Farms, we use the 80-year-old mother barrel started by Phillip’s grandfather in 1919 and another begun in 1925. Grapes from our Italian field blend are crushed, mixed with vinegar from the mother, and put in oak barrels to be aged for three years before bottling. While most wine vinegars have a grain acidity of 4.5%, our tangy and robust Estate Zinfandel Vinegar tests at 7.5%. Enjoy it in favorite recipes for family dining and entertaining! |
